Warm bean and feta pasta salad

Let's make delicious bean stew!
Ingredients:
  • 250g dried farfalle (bow-tie) pasta
  • 250g green beans, trimmed, halved
  • 125.00 ml fresh flat-leaf parsley leaves
  • 2 green onions, thinly sliced
  • 40.00 ml finely shredded fresh mint leaves
  • 80g feta, crumbled
  • 23.40 gm wholegrain mustard
  • 42.00 gm lemon juice
  • 56.88 gm extra-virgin olive oil
  • 2.50 gm caster sugar
Instructions:
  • Boil pasta in salted water as per package instructions until tender, adding beans for the last 3 minutes. Drain and transfer to a large bowl.
  • Prepare the dressing by combining mustard, lemon rind, lemon juice, oil, and sugar in a bowl. Whisk until fully combined.
  • Combine parsley, onion, mint, feta, and dressing with the pasta. Season with pepper and toss well. Enjoy!
