Quick and flavorful weeknight warm salad with chorizo, Spanish beans, and feta cheese.
Ingredients:
  • 2 red capsicums, seeded, quartered
  • 5 roma tomatoes, quartered
  • 1 chorizo sausage, thinly sliced
  • 420g can Spanish Style Beanz Creationz
  • 120g pkt Australian 4 Leaf Salad
  • 1 small red onion, cut into thin wedges
  • 100g fetta, crumbled
  • Extra virgin olive oil, extra, to serve
  • Lemon wedges, to serve
Instructions:
  • Preheat your oven to 200°C. Line a baking tray with parchment paper. Arrange capsicum and tomato on the tray. Drizzle with oil and season with your favorite spices. Bake for 25 minutes or until the tomato is tender. Slice the capsicum thickly.
  • While waiting, warm up a frying pan over medium heat. Sear the chorizo, turning occasionally, for about 5 minutes or until it reaches a golden brown color. Place it on a plate lined with paper towel. Lower the heat to low.
  • Place beans and 2 tablespoons of water into the pan. Stir and cook for 3 minutes until beans are heated through.
  • Assemble the beans, capsicum, tomato, chorizo, salad leaves, and onion on a platter. Sprinkle with fetta cheese. Drizzle with extra oil and serve with lemon wedges.
