Chorizo and bean minestrone

Warm up with tantalizing chorizo and bean minestrone soup this season.
Ingredients:
  • 2 chorizo sausages, finely chopped
  • 1 brown onion, finely chopped
  • 2 celery sticks, finely chopped
  • 1 carrot, peeled, finely chopped
  • 1 zucchini, finely chopped
  • 400g can tomato soup
  • 1 litre (4 cups) chicken style liquid stock
  • 400g can cannellini beans, rinsed, drained
  • 40g English spinach, finely shredded
  • Bough pesto, to serve
  • Crusty bread, to serve
Instructions:
  • Preheat a large saucepan over high heat. Cook the chorizo, stirring occasionally, for 5 minutes or until it turns brown. Transfer the chorizo to a bowl using a slotted spoon.
  • Sauté onion, celery, carrot, zucchini, and garlic in a pan for 5 minutes until onion softens. Add sausage, Heinz Big Red tomato soup, and chicken stock, then bring to a boil. Simmer on medium-low heat for 10 minutes until the soup thickens slightly, stirring occasionally.
  • Combine the beans and spinach in the soup. Take off the heat, then season to taste with salt and pepper.
  • Divide the soup into bowls. Top each with a spoonful of pesto and serve promptly with crusty bread on the side, if desired.
