Chorizo and bean stew

Cozy up with a delightful stew to brighten your Wednesday.
Ingredients:
  • 700g potatoes (such as chats or Nicola), quartered
  • 60ml (1/4 cup) olive oil
  • 1 red onion, peeled, chopped
  • 500g chorizo sausage, sliced*
  • 4 garlic cloves, crushed
  • 1 tsp dried chilli flakes
  • 400g can butter beans
  • 410g can diced tomatoes
  • 2 fresh bay leaves
  • 150ml chicken style liquid stock
  • 80.00 ml chopped flat-leaf parsley
Instructions:
  • Add the potatoes to a large saucepan filled with cold, salted water. Bring to a boil and simmer for 10 minutes until potatoes are tender. Then, drain the potatoes.
  • Heat the oil in the pan. Cook the onion until just softened for 3-4 minutes. Cook the chorizo until golden, then set it aside. In the same pan, add the garlic and chilli and cook briefly. Add potatoes, butter beans, tomatoes, bay leaves, and the chorizo mixture. Pour in stock, bring to a boil, then simmer on low for 10 minutes. Stir in parsley and serve with crusty bread.
