Delicious Brazilian pork stew with tenderloin and chorizo, a fabulous dish from my friend.
Ingredients:
  • 1 teaspoon minced garlic
  • 1 large onion, chopped
  • 1 (12 ounce) pork tenderloin, cut into 1/2 inch cubes
  • 1 (19 ounce) can black beans, drained and rinsed
  • 0.25 cup water
  • 3 chorizo sausages, cut into 1/2 inch thick pieces
  • 2 bay leaves
Instructions:
  • In a skillet over medium heat, sizzle garlic and onion in 1 tablespoon vegetable oil until the onion softens and turns translucent. Transfer to a saucepan. Increase heat to medium-high, pour in the remaining 1 tablespoon vegetable oil, and sear cubed pork until golden brown.
  • Pour 3/4 of the black beans and 1/4 cup water into a blender and pulse until finely chopped, leaving some texture. Transfer the mixture to a saucepan along with the whole beans, pork cubes, chicken stock, chorizo, and bay leaves. Bring to a boil over medium-high heat, then cover and simmer over medium-low heat for 30 minutes. Season with salt and pepper to taste before serving.
