Pork and black bean tacos with pineapple salsa

Whip up quick pork and black bean tacos with zesty chili-pineapple salsa for a fast and flavorful meal ready in 30 minutes or less!
Ingredients:
  • 9.20 gm olive oil
  • 1 red onion, finely chopped
  • 500g Free Range Pork Mince
  • 40g Mexican seasoning
  • 250g Mexican sauce or salsa
  • 400g can black beans, rinsed, drained
  • 12 small flour tortillas
  • 227g can pineapple slices in juice, drained, finely chopped
  • 62.50 ml coarsely chopped coriander
  • 1 long red chilli, seeded, finely chopped
  • Butter lettuce leaves, to serve
  • 1 carrot, peeled, cut into matchsticks
  • 1 avocado, stoned, peeled, finely chopped
  • Sliced red chilli, to serve (optional)
Instructions:
  • 1. Heat oil in a frying pan over medium heat. 2. Sauté onion until softened, about 5 minutes. 3. Add mince and cook until it changes color and is cooked through, about 5 minutes. 4. Stir in Mexican seasoning and cook for an additional minute. 5. Add Mexican sauce and beans, then cook until heated through and sauce thickens, about 3 minutes.
  • Heat the tortillas according to the instructions on the package.
  • Mix the pineapple, coriander, and chili in a small bowl.
  • Evenly distribute lettuce, minced mixture, carrot, and avocado among tortillas. Top with pineapple salsa and, if desired, serve immediately with extra chili on the side.
