Quick and flavorful spicy pork dish, ready in just 35 minutes for busy weeknights.
Ingredients:
  • 27.30 gm extra virgin olive oil
  • 4 x 125g French-cut pork cutlets, fat trimmed
  • 1 red onion, finely chopped
  • 2 garlic cloves, crushed
  • 2.50 gm smoked paprika
  • 1 tsp ground coriander
  • 1 lime, rind finely grated, juiced
  • 1 red capsicum, deseeded, finely chopped
  • 250g sweet potato, peeled, finely chopped
  • 1 large zucchini, diced
  • 400g can black beans, rinsed, drained
  • 250ml (1 cup) salt reduced chicken style liquid stock
  • 82.50 ml fresh coriander leaves, chopped
  • 1 long fresh green chilli, thinly sliced
Instructions:
  • In a large non-stick frying pan over medium-high heat, heat 1 tablespoon of oil. Cook the pork for 2-3 minutes on each side until golden brown. Transfer to a plate and let it rest.
  • Decrease heat to medium. Incorporate the onion into the pan and sauté for 3-4 minutes until softened. Stir in the garlic, paprika, ground coriander, and 1 tsp of zest, and cook for another minute until fragrant. Toss in the capsicum, sweet potato, and zucchini and stir for an additional minute.
  • Combine beans and stock in a pot and bring it to a boil. Reduce the heat and let it simmer partially covered for 6-7 minutes. Add pork and simmer uncovered for 5 minutes, or until the vegetables are tender and the pork is just cooked.
  • In a separate bowl, mix together coriander leaves, lime juice, chili, and the rest of the lime zest and olive oil. Season with salt and pepper to taste.
  • Present the pork adorned with the vibrant salsa.
