Mexican pulled pork rice bowl recipe

"Quick and easy pulled pork rice bowl with only 5 ingredients. Perfect for using leftover rice. Make a flavorful Mexican rice with rice, black beans, and salsa."
Ingredients:
  • 800g packet Cook Mild Mexican Inspired Pork Shoulder
  • 2 x 240g tubs Old El Paso Mexi Rice with Chilli and Veggies
  • 250g cherry tomatoes, halved
  • 1 large avocado, sliced
  • 100g packet baby spinach
  • Olive oil, to drizzle
Instructions:
  • Microwave the pork according to packet instructions. Then shred the warm meat using 2 forks in a large bowl.
  • Warm the rice according to the instructions on the packet.
  • Separate rice and pork into individual serving bowls. Top each bowl with tomato, avocado, and spinach. Season to taste and lightly drizzle with oil before serving.
