Delicious Mexican pulled pork casserole with rice, salsa, and melted cheese - a tasty way to use up leftovers.
Ingredients:
  • 10 (8 inch) corn tortillas
  • 3 cups cooked pulled pork
  • 4 tablespoons canned black beans, rinsed
  • 0.5 (8 ounce) package cream cheese, cut into cubes
  • 2 tablespoons chopped fresh cilantro, or more to taste
  • 1.5 cups salsa, or more to taste
  • 6 tablespoons leftover cooked rice
  • 8 tablespoons shredded Mexican cheese blend
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Arrange 6 corn tortillas in the casserole dish to form a complete layer on the bottom and along the sides.
  • Layer half of the pulled pork, black beans, cream cheese, cilantro, salsa, cooked rice, and Mexican cheese blend in a dish. Cover with 4 corn tortillas and repeat the layering, finishing with the remaining Mexican cheese blend.
  • Bake until the cheese is melted and bubbly in the preheated oven for approximately 25 minutes.
