Delicious pulled pork burgers, slow-cooked to perfection, perfect for cozy winter nights.
Ingredients:
  • 1.2kg boneless pork shoulder, rind and fat removed
  • 375ml can cola
  • 211.88 gm barbecue sauce
  • 1/2 tsp chilli powder (optional)
  • 6 Brioche Hamburger Buns, split, toasted
  • 123.75 gm whole-egg mayonnaise
  • 300g packet fine-cut coleslaw kit
  • 250.00 ml fresh at-leaf parsley leaves
  • 3 dill pickles, sliced
  • Sweet potato chips, to serve
Instructions:
  • Place the pork in the slow cooker and in a small bowl, combine the cola, barbecue sauce, and chili powder, if using. Pour the mixture over the pork, cover, and cook on LOW for 8 hours (or HIGH for 4 hours) until the pork is incredibly tender.
  • Place the pork in a heatproof dish and shred it using two forks. Keep it warm by covering it. Strain the pan juices into a small saucepan and bring to a boil over medium-high heat for 15 minutes until thickened. Combine the thickened sauce with the pork by tossing it together.
  • Spread mayonnaise on top bun bases, then add a layer of pork mixture, coleslaw, parsley, and pickles. Top with the remaining bun halves to assemble the sandwiches. Accompany with a side of sweet potato chips.
