Elevate your pulled pork sandwich with Jamaican jerk seasoning and a hint of cola for a bold BBQ twist.
Ingredients:
  • 1 boneless pork shoulder (2 1/2 lb)
  • 1 tablespoon Jamaican jerk seasoning (dry)
  • 1/4 teaspoon dried thyme leaves
  • 1 medium onion, chopped (1/2 cup)
  • 1 cup cola
  • 2 cups barbecue sauce
  • 8 sandwich buns or flour tortillas (8 to 10 inch)
Instructions:
  • Prep slow cooker with cooking spray. Trim pork fat, apply jerk seasoning and thyme. Add pork to slow cooker, top with onion, and pour cola over.
  • Cover and simmer on Low heat for 8 to 10 hours.
  • After taking out the pork from the slow cooker and setting aside 1/2 cup of juices, shred the pork using 2 forks. Return the pork to the slow cooker, add barbecue sauce along with the reserved juices, then switch the heat setting to High. Cover and cook for 30 to 45 minutes until fully heated. Serve the flavorful filling on buns.
