Irresistible slow-cooker pulled pork chili with rice, a comforting weeknight meal that will leave you craving more.
Ingredients:
  • 5.00 gm smoked paprika
  • 5.00 gm ground cumin
  • 2 tsp garlic powder
  • 1 tsp ground oregano
  • 1.6kg pork scotch fillet roast
  • 1 red onion, halved, sliced
  • 225g smoky chipotle fajita cooking sauce
  • 300g jar mild salsa
  • 400g can diced tomato
  • 2 x 400g cans kidney beans, drained, rinsed
  • 40.00 ml red wine vinegar
  • Steamed long grain white rice, to serve
  • Chopped avocado, to serve
  • Lime wedges, to serve
  • Sour cream, to serve
  • Small fresh coriander leaves, to serve
Instructions:
  • Mix spices and oregano in a bowl. Season generously with salt and pepper, then massage the flavorful mixture onto the pork.
  • In a 5.5 litre slow cooker, mix together onion, chipotle sauce, salsa, diced tomato, kidney beans, and vinegar. Season with salt and pepper. Place pork on top. Cover and cook on HIGH for 4 hours (or LOW for 8 hours) until pork is tender.
  • Shred the pork using 2 forks and combine it with the sauce. Serve with rice, avocado, lime, a dollop of sour cream, and a sprinkle of fresh coriander on top.
