Slow-Cooker Chipotle Pulled-Pork Sandwiches

Elevate pulled pork with a kick by adding chili powder and chipotle chiles in adobo sauce.
Ingredients:
  • 1 tablespoon packed brown sugar
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 1 1/2 teaspoons ground mustard
  • 3 teaspoons chili powder
  • 1 boneless pork shoulder (3 lb), trimmed of fat
  • 1 can (8 oz) tomato sauce
  • 2 canned chipotle chiles, finely chopped
  • 1 tablespoon adobo sauce from canned chipotle chiles
  • 20 burger buns, split
  • 5 medium avocados, pitted, peeled and thinly sliced
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. In a small bowl, combine brown sugar, salt, garlic powder, mustard, and chili powder. Massage the seasoning mixture onto the pork. Transfer the pork into the cooker and sprinkle any extra seasoning over the top.
  • Cover and simmer on low heat for 7 to 8 hours.
  • Take out the pork from the cooker and place it on a cutting board. Skim off the fat from the cooking liquid and set it aside. Let the pork cool a bit. Using two forks, shred the pork. Put the shredded pork back into the cooker and mix in the tomato sauce, chipotle chiles, and adobo sauce. Add some of the reserved cooking liquid if you prefer a moister result.
  • Turn up the heat to High and cover the dish. Let it cook for an additional 15 to 30 minutes until it's piping hot. Spoon approximately 1/3 cup of the pork mixture into each bun, then top it off with a few slices of avocado. You can keep the pork warm on Low heat for up to 2 hours, giving it a stir every now and then.
