Slow-Cooker Pulled Pork with Chipotle, Honey and Lime

Smoky chipotle in adobo, sweet honey, and zesty lime elevate tender slow-cooked pork.
Ingredients:
  • 1/4 cup water
  • 2 medium onions, quartered
  • 1 boneless pork shoulder roast (3 lb)
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons pepper
  • 2 canned chipotle chiles in adobo sauce, chopped
  • 1/2 cup ketchup
  • 3 tablespoons lime juice
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons honey
  • 2 tablespoons butter, melted
  • 1 teaspoon ground coriander
Instructions:
  • Begin by adding water and onions to the slow cooker. Season the pork with salt, pepper, and half of the chopped chiles, then place the pork into the slow cooker.
  • Cover and simmer on Low heat for 6 to 8 hours.
  • Transfer the pork and onions from the slow cooker to a large plate or cutting board; allow them to cool slightly. Dispose of the cooking juices. Use two forks to shred the pork, removing any excess fat. Return the shredded pork and onions to the slow cooker.
  • Combine the remaining half of chiles, ketchup, lime juice, Worcestershire sauce, honey, butter, and coriander in a small bowl, then stir into the pork mixture.
  • Cover and simmer on low heat for 1 hour.
