Slow cooker pulled pork with low-carb BBQ sauce for a keto-friendly meal.
Ingredients:
  • 2 teaspoons smoked paprika
  • 2 teaspoons onion powder
  • 2 teaspoons kosher salt
  • 1 teaspoon ground ancho chile powder
  • 1 teaspoon ground black pepper
  • 1 (4 pound) boneless pork shoulder
  • 0.5 cup chicken broth
  • 1 teaspoon liquid smoke flavoring
  • 0.5 cup keto barbecue sauce
Instructions:
  • In a small bowl, mix smoked paprika, onion powder, salt, garlic powder, chile powder, and black pepper. Massage the spice blend onto the pork shoulder.
  • Place the seasoned pork in a slow cooker and pour in the broth and liquid smoke.
  • Cook the pork on Low for 7 to 8 hours until it is fully cooked. Take the pork out of the slow cooker and shred it.
  • Transfer flavorful juices from slow cooker to a 2-quart saucepan. Stir in barbecue sauce and bring to a lively boil on medium-high heat. Stir constantly as it simmers and reduces to about 1/2 cup, which should take around 7 to 8 minutes. Drizzle this savory sauce over the shredded pork and toss everything together.
