Delicious keto Spanish "rice" made with cauliflower, onions, spices, and salsa for a low-carb twist.
Ingredients:
  • 1 (16 ounce) package frozen riced cauliflower
  • 2 tablespoons water
  • 4 tablespoons olive oil
  • 0.5 yellow onion, finely chopped
  • 2 tablespoons granulated garlic
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground white pepper
  • 0.5 cup chunky salsa
Instructions:
  • Place cauliflower rice in a microwave-safe bowl. Drizzle 2 tablespoons of water over it. Cover with plastic wrap and microwave on high until tender for about 5 minutes. Allow it to cool down until it's safe to touch.
  • Place a dish towel on a flat surface. Add half of the cauliflower. Bundle up the towel by holding the corners together to enclose the cauliflower. Gently twist and squeeze tightly to remove excess water. Repeat with the remaining cauliflower.
  • In a sizzling skillet, cook cauliflower, onion, garlic, chili powder, cumin, and white pepper in olive oil until cauliflower is golden and liquid evaporates, about 5 minutes. Stir in salsa and continue cooking until it thickens, about 8 to 10 minutes.
