Keto cauliflower crackers with flavorful ranch, Parmesan, and cayenne. Low-carb and delicious!
Ingredients:
  • cheese cloth
  • 1 (12 ounce) package frozen riced cauliflower
  • 1 large egg
  • 1 tablespoon dry ranch salad dressing mix
  • 0.125 teaspoon cayenne pepper, or more to taste
  • 1 cup shredded Parmesan cheese
Instructions:
  • Preheat the oven to 425°F (220°C). Prepare a lined baking sheet and cheesecloth-covered strainer for later use.
  • Place riced cauliflower in a microwave-safe bowl, cover, and heat in the microwave for 3 to 4 minutes. Then, transfer it to a strainer and let it cool for 15 minutes. Finally, gather the edges of the cheesecloth, twist, and squeeze out any excess moisture from the cauliflower.
  • In a large bowl, mix together cauliflower, egg, ranch mix, and cayenne pepper until well combined. Fold in Parmesan cheese until evenly mixed.
  • Portion out cauliflower mixture onto the prepared cookie sheet using a small cookie scoop. Flatten to 1/16-inch thickness using a rolling pin, cup, or your hand for crispier crackers.
  • Bake crackers in the preheated oven for a total of 20 minutes, flipping halfway through. Allow to cool on a wire rack.
