Elevate your breakfast with a low-carb twist: crispy cauliflower hash browns with savory cheddar and bacon.
Ingredients:
  • 3 cups grated cauliflower
  • 1 cup shredded Cheddar cheese
  • 0.25 cup real bacon bits
  • 1 tablespoon diced chives
  • 1 pinch cayenne pepper

Instructions:
  • Preheat the oven to a perfect 400 degrees F (200 degrees C).
  • Transfer the grated cauliflower to a microwave-safe bowl and microwave on high for 2 minutes. Allow the cauliflower to cool for 5 minutes before proceeding.
  • Dry cauliflower thoroughly with a clean dish towel, then place it in a large mixing bowl. Mix in Cheddar cheese, egg, bacon bits, chives, salt, pepper, and cayenne until fully combined.
  • Prepare a large baking sheet with cooking spray. Divide the cauliflower mixture into 6 equal portions, leaving space between each one. Flatten and shape them into ovals using your hands.
  • Bake in the preheated oven for 15 minutes until golden brown. Switch to low broil and broil for an additional 5 minutes until crispy. Allow to cool for 5 minutes to set.
