Keto-friendly cauliflower mash with bacon, cheese, and MCT oil for a flavorful, high-fat twist!
Ingredients:
  • 0.5 pound bacon, diced
  • 1 large head cauliflower, cut into florets
  • 1 cup shredded Parmesan cheese
  • 4 tablespoons unsalted butter, at room temperature
  • 2 tablespoons medium-chain triglyceride (MCT) oil
  • 0.5 tablespoon apple cider vinegar
  • sea salt to taste
Instructions:
  • Fry bacon in a large skillet on medium-high heat, turning occasionally, until crispy and golden, for about 5 to 10 minutes. Transfer to paper towels to drain, keeping the flavorful grease in the skillet.
  • Place cauliflower in a metal or silicone steamer basket inside your multi-functional pressure cooker. Add 1 cup of water to the pot, lock the lid, and select the Steam function for 4 minutes. Let the pressure build for 10 to 15 minutes.
  • Carefully release pressure using the quick-release method following the manufacturer's instructions, this should take around 5 minutes. Then, unlock and remove the lid.
  • Transfer drained cauliflower to a deep bowl, then add Parmesan cheese, butter, MCT oil, vinegar, and salt. Blend until smooth using an immersion blender. Mix in diced bacon and finish by incorporating 1 to 2 tablespoons of reserved bacon grease.
