Loaded cauliflower mash

Upgrade classic cauliflower cheese to loaded mash with bacon crunch topping.
Ingredients:
  • 1 large cauliflower, trimmed, cut in florets
  • 2 garlic cloves, peeled, smashed
  • 18.20 gm olive oil
  • 200g streaky bacon, coarsely chopped
  • 85g (1/3 cup) sour cream
  • 80g (1 cup) coarsely grated cheddar
  • 20.00 ml chopped fresh chives, plus extra to sprinkle
  • Melted butter, to serve
Instructions:
  • Bring a large saucepan of water to a boil. Add the cauliflower and garlic, simmer for 10-15 minutes until cauliflower is tender. Drain and gently pat dry with paper towel.
  • Heat oil in a pan over medium heat, then cook bacon until golden and crisp, about 4 minutes. Set aside.
  • Preheat your oven to 180C/160C fan-forced. Use a food processor to finely crumble the cauliflower mixture. Then, transfer it to a medium bowl and mix in the sour cream, half of the cheese, and chives.
  • Spread the cauliflower mixture in a 20cm round ovenproof dish. Sprinkle the remaining cheese and bacon on top. Bake for 10 minutes or until the cheese is golden and melted. Finish with a sprinkle of extra chives and a drizzle of butter.
