Creamy loaded cauliflower with Cheddar, ranch, and sour cream for a decadent twist on loaded potatoes.
Ingredients:
  • 1 head cauliflower
  • 0.5 cup sour cream
  • 0.5 cup shredded Cheddar cheese
  • 1 teaspoon dry ranch salad dressing mix (such as Hidden Valley Ranch®)
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 1 tablespoon butter, cut into small pieces, or more to taste
Instructions:
  • Preheat oven to 350°F (175°C) for the perfect bake.
  • 1. Prepare a steamer insert in a saucepan and fill with water just below the steamer. Bring to a boil. Steam cauliflower until very tender, about 15-20 minutes. 2. Transfer cooked cauliflower to a bowl, mash, and strain excess water.
  • Combine cauliflower with creamy sour cream, sharp Cheddar cheese, zesty ranch dressing mix, onion powder, and garlic powder in a 9-inch baking dish, then generously add a layer of butter on top.
  • Bake until bubbly in the preheated oven for 30-45 minutes.
