Indulge in a decadent loaded creamy cauliflower dish, topped with chives, bacon bits, and melted Cheddar cheese. Goodbye baked potato!
Ingredients:
  • 1 large head cauliflower, cut into bite-sized pieces
  • 1 cup shredded mozzarella cheese
  • 0.5 cup sour cream
  • 0.5 cup mayonnaise
  • 0.25 cup bacon bits
  • 3 tablespoons chopped fresh chives
  • 1 cup shredded sharp Cheddar cheese
Instructions:
  • Heat the oven to 425 degrees F (220 degrees C).
  • 1. Set up a steamer in a saucepan and pour water until just below the steamer. Bring the water to a boil. Add cauliflower, cover, and steam until tender, for about 8 to 10 minutes. Drain and allow to cool for 10 minutes.
  • In a large bowl, mix together mozzarella cheese, sour cream, mayonnaise, half of the bacon bits, and chives. Add cauliflower and stir until well combined. Transfer the mixture to a baking dish and sprinkle the remaining bacon bits and Cheddar cheese on top.
  • Bake in the hot oven until the cheese is bubbly and golden, about 15 to 20 minutes.
