Irresistible cauliflower casserole loaded with crispy bacon and gooey mozzarella and Cheddar cheese - a crowd-pleasing side dish perfect for picky eaters.
Ingredients:
  • nonstick cooking spray
  • 3 slices bacon
  • 1 medium head cauliflower, cut into florets
  • 0.25 cup chicken broth
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 0.25 teaspoon ground turmeric
  • 1 (10.75 ounce) can cream of chicken soup (such as Campbell's®)
  • 0.5 cup shredded mozzarella cheese
  • 0.5 cup shredded Cheddar cheese
  • 1 scallion, green part only, thinly sliced
Instructions:
  • In a large skillet over medium-high heat, cook the bacon until evenly browned, about 10 minutes, turning occasionally. Drain the bacon on paper towels, then crumble and divide into thirds once it has cooled.
  • Coat the interior of a slow cooker with cooking spray.
  • Add the cauliflower to the slow cooker and generously season with salt, pepper, and turmeric before pouring in the chicken broth.
  • In a bowl, mix cream of chicken soup with mozzarella and Cheddar cheese. Drizzle over cauliflower mixture.
  • Cook on High for approximately 2 hours until the cauliflower reaches your desired tenderness. Stir in most of the crumbled bacon right before serving.
  • Place the dish on a serving platter and garnish with fresh green onions and the rest of the crispy bacon.
