Cheesy slow cooker pasta bake with veggies for a delicious and easy family meal.
Ingredients:
  • 20g unsalted butter, chopped
  • 2 leeks, pale section only, thinly sliced
  • 2 tsp plain flour
  • 1 large cauliflower, cut into florets
  • 250g pasta shells
  • 300ml pouring (pure) cream or thickened cream
  • 750ml vegetable stock
  • 46.80 gm Dijon mustard
  • 100g cheese
  • 120g tasty cheese
  • 240g ricotta
  • 60ml olive oil
  • 1 bunch sage, leaves picked
  • 115g sourdough baguette, torn into small pieces
  • Finely grated nutmeg, to serve
Instructions:
  • In a frying pan, heat oil and butter over medium heat. Sauté leek for 4 minutes until tender. Transfer to a slow cooker with flour, cauliflower, pasta, cream, stock, and mustard. Season, cover, and cook on high for 2 hours (or 3 hours on low) until pasta is tender. Add havarti, cheddar, and ricotta. Stir until cheese melts. Let sit for 10 minutes before serving.
  • Heat additional oil in a spacious non-stick skillet over high heat. Fry sage in two batches for 30 seconds until crispy. Place on a plate. Then, add sourdough and garlic to the skillet. Cook, stirring, for 3 minutes until golden.
  • Evenly distribute the pasta mixture into serving bowls. Season to taste, then top with sage, sourdough mixture, and a sprinkle of nutmeg.
