Slow-cooker broccoli and 3-cheese soup

Indulge in a rich slow-cooker broccoli and 3-cheese soup for a quick and cozy dinner.
Ingredients:
  • 1.2kg broccoli, stems trimmed (see notes)
  • 400g cream delight potatoes, peeled
  • 505g can potato and leek soup
  • 4 garlic cloves, peeled
  • 1 litre salt reduced chicken style liquid stock
  • 312.50 ml frozen peas
  • 125g cream cheese, chopped, softened
  • 250.00 ml grated tasty cheese
  • 125.00 ml finely grated parmesan, plus extra to serve
  • 40.00 ml finely chopped fresh chives
  • Extra virgin olive oil, to serve
Instructions:
  • In a slow cooker, combine broccoli, potato, soup, garlic, stock, and 1 cup of water. Cover and cook on LOW for 6 hours (or HIGH for 3 hours) until vegetables are tender. Stir in peas and continue cooking covered for 5 minutes.
  • Switch off the cooker. Use a stick blender to puree the soup until smooth. Add the cheeses and stir until they melt and the mixture is smooth. Season with salt and pepper to taste.
  • Pour soup into individual bowls. Sprinkle with additional parmesan, fresh chives, and a drizzle of olive oil.
