Enhance slow cooker broccoli-cheese soup with Velveeta® by adding potatoes, celery, and carrots for extra flavor and texture.
Ingredients:
  • 3 tablespoons salted butter
  • 0.5 cup chopped onion
  • 0.5 cup chopped green bell pepper
  • 3 (10.5 ounce) cans condensed cream of chicken soup
  • 3 cups milk
  • 1 (1 ounce) package ranch dressing mix
  • 2 (1 pound) packages processed cheese food (such as Velveeta®), cubed
  • 1 (10 ounce) package frozen chopped broccoli
  • 1 cup finely chopped celery
  • 0.5 cup finely chopped carrots
  • 1 cup diced potatoes
Instructions:
  • In a skillet over medium heat, melt the butter until it sizzles, then add the onion and bell pepper. Cook and stir until the onion becomes soft and translucent, about 5 minutes.
  • In a slow cooker, mix together condensed soup, milk, and ranch dressing mix until smooth. Add processed cheese food, followed by broccoli, celery, carrots, potatoes, and onion-pepper mix.
  • Cook on Low with the dish covered, stirring occasionally, until the cheese is completely melted, which should take 3 to 4 hours.
