Slow Cooker Cheesy Broccoli Soup

Start on stove, then slow cook for extra cheesy broccoli soup.
Ingredients:
  • 1 medium yellow onion, roughly chopped
  • 2 cloves garlic, roughly chopped
  • 10 tablespoons salted butter, divided
  • 3 cups chicken broth
  • 2 packets Swanson® Flavor Boost™ Concentrated Chicken Broth
  • 0.5 cup all-purpose flour
  • 0.25 teaspoon ground black pepper
  • 1.5 (16 ounce) bags frozen broccoli florets
  • 19 ounces processed cheese food (such as Velveeta®), cubed
  • 0.5 cup shredded sharp Cheddar cheese
  • 0.5 cup shredded Monterey Jack cheese
  • 2 ounces cream cheese
  • 1 cup milk
  • 1 cup heavy cream
Instructions:
  • Pulse onion and garlic in a food processor until finely minced.
  • In a large skillet over medium heat, melt 2 tablespoons of butter until sizzling. Add the onion-garlic mixture and sauté until it caramelizes and develops a golden brown color, about 5 to 8 minutes.
  • Combine the chicken broth and flavor packets in a bowl to enhance the delicious flavors.
  • Pour the onion mixture into a 5-quart or larger slow cooker. In the same skillet, melt the remaining butter until bubbling. Whisk in flour and cook for 3 minutes. Gradually pour in the chicken broth mixture and season with salt and pepper. Stir constantly until the mixture is smooth and lump-free. Bring to a boil.
  • Stir in frozen broccoli into the flavorful gravy and cook for 10 minutes, stirring frequently. Use a large spoon to transfer the broccoli to the slow cooker, ensuring to leave excess gravy in the skillet.
  • Combine processed cheese food, Cheddar, Monterey Jack, and cream cheese with the gravy. Add milk and cream, then transfer the mixture to the slow cooker and stir until well combined.
  • Cook on Low for 4 hours, stirring occasionally. Turn off the slow cooker and allow the mixture to cool and thicken slightly before serving.
