Cheesy cauliflower and apple sausage casserole cooked in a slow cooker.
Ingredients:
  • 1 serving olive oil cooking spray
  • 1 link sweet apple chicken sausage (such as Trader Joes®), cut into 1/4-inch slices
  • 1 large head cauliflower, cut into florets
  • 0.5 (8 ounce) package cream cheese, cubed
  • 3 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 0.5 teaspoon freshly ground black pepper, or to taste
  • 0.25 teaspoon red pepper flakes, or to taste
  • 6 ounces shredded pepper Jack cheese
  • 4 slices bacon
Instructions:
  • Coat the interior of a 4- to 6-quart slow cooker with cooking spray.
  • Coat a small skillet with cooking spray, brown the sausage over medium heat for 2 to 3 minutes. Transfer sausage to the slow cooker and mix in cauliflower, cream cheese, butter, garlic powder, salt, pepper, and red pepper flakes until well combined.
  • Cover the slow cooker and let the cauliflower cook on Low until fork tender, approximately 2 hours. Once ready, mix in the pepper Jack cheese and continue to cook for an additional 30 minutes.
  • In a large skillet over medium-high heat, cook the bacon until perfectly browned and crispy, turning occasionally, for about 10 minutes. Drain the cooked bacon on paper towels, let cool slightly, then crumble it over the casserole before serving.
