Creamy chicken, bacon and cauliflower bake recipe

Indulge in a decadent, gluten-free bake loaded with chicken, bacon, and cauliflower.
Ingredients:
  • 10g butter
  • 900g cauliflower
  • 120g bacon rasher
  • 1 bunch English spinach, trimmed, chopped
  • 125ml (1/2 cup) pouring cream
  • 2 tsp fresh thyme leaves (optional)
  • 2 green shallots, trimmed, sliced
  • 500g chicken thigh fillets, fat trimmed
  • 55g (1/2 cup) 3 cheese mix
Instructions:
  • Preheat your oven to 200C/180C fan forced and lightly grease a 2L (8-cup) ovenproof baking dish.
  • In a large frying pan over medium heat, heat the oil and butter until the butter is foaming. Add the cauliflower and bacon and cook for 8-10 minutes, stirring occasionally, until light golden.
  • Sauté the spinach in the pan until wilted, then mix in the cream, thyme, and half of the shallot off the heat. Transfer the mixture to the prepared dish.
  • Clean the pan thoroughly, then spray it with oil. Cook the chicken for 2 minutes on each side, or until it turns golden. Place the cooked chicken on top of the cauliflower mixture.
  • Spread a layer of cheese over the chicken. Bake for 20-25 minutes or until beautifully golden. Allow to rest for 5 minutes before serving, garnished with the remaining shallot.
