Chicken, bacon and cauliflower bake recipe for two

Satisfying creamy chicken bake for two, loaded with all your favorite ingredients.
Ingredients:
  • 9.20 gm olive oil
  • 10g butter
  • 450g cauliflower
  • 1 rasher bacon, chopped
  • 1/2 bunch English spinach, trimmed, chopped
  • 60ml (1/4 cup) pouring cream
  • 1 tsp fresh thyme leaves (optional)
  • 1 green shallot, trimmed, sliced
  • 250g chicken thigh fillets, fat trimmed
  • 1/4 cup grated 3-cheese mix
Instructions:
  • Preheat your oven to 200C (180C fan forced) and lightly grease a 1L (4-cup) ovenproof baking dish.
  • In a large frying pan over medium heat, warm the oil and butter until the butter foams. Add the cauliflower and bacon, cook for 8-10 minutes, stirring occasionally, until light golden.
  • Incorporate the spinach into the pan and sauté for 2 minutes until it wilts. Take the pan off the heat and mix in the cream, thyme, and half of the shallot. Stir well to combine, then transfer everything to the prepared dish.
  • Clean the pan and give it a quick spray with oil. Cook the chicken in the pan for 2 minutes per side, or until it turns golden brown. Place the cooked chicken on top of the cauliflower mixture.
  • Evenly layer cheese over the chicken. Bake until golden brown, approximately 20-25 minutes. Rest for 5 minutes, then serve garnished with the remaining shallot.
