Succulent bacon-wrapped chicken coated in sweet brown sugar and spicy chili powder, baked alongside fluffy cauliflower rice for a quick and delicious sheet pan dinner in under an hour.
Ingredients:
  • 0.33333334326744 cup chopped pecans, or more to taste
  • 2 pounds riced cauliflower
  • 3 tablespoons olive oil
  • 2 cloves garlic, grated
  • 1 tablespoon chopped fresh thyme, divided
  • 2.5 teaspoons kosher salt, divided
  • freshly ground black pepper to taste
  • 4 thinly sliced chicken breasts
  • 8 thin bacon slices
  • 0.25 cup brown sugar
  • 0.75 teaspoon chili powder
  • 0.5 cup chopped fresh parsley
Instructions:
  • Toast pecans in a skillet over medium heat, stirring occasionally, until fragrant and golden brown, for about 5 minutes.
  • Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil, making sure to create a protective barrier by allowing the foil to come up the sides of the sheet to catch all the flavorful juices.
  • Toss cauliflower with olive oil, garlic, 2 teaspoons thyme, 1 1/2 teaspoons salt, and black pepper in a bowl, then spread over 2/3 of the baking sheet.
  • Season the chicken with a flavorful blend of 1 teaspoon thyme, 1 teaspoon salt, and ground black pepper. Wrap each chicken breast snugly with 2 slices of bacon to fully cover the chicken. Line the chicken in a single row on the last 1/3 of the baking sheet.
  • Combine the rich brown sugar with the spicy chili powder in a bowl, then generously sprinkle half of the mixture over the bacon-wrapped chicken.
  • Place the dish in the preheated oven for 25 minutes. After that time, use tongs to stir the cauliflower and flip the bacon-wrapped chicken. Sprinkle the rest of the brown sugar mixture over the chicken. Keep baking until the chicken is no longer pink in the center and the bacon is crispy, which should take about 20 to 25 minutes. Check the chicken's doneness with an instant-read thermometer, ensuring it reads at least 165 degrees F (74 degrees C). If the bacon needs additional crisping, broil for a few minutes.
  • Take out the chicken from the baking sheet and toss cauliflower in the flavorful bacon and chicken drippings. Mix in toasted pecans and parsley. Serve the cauliflower in bowls, topped with the bacon-wrapped chicken.
