Creamy cauliflower risotto with savory mushrooms and nutty Parmesan - a low-carb twist on a classic favorite!
Ingredients:
  • 0.25 cup ghee
  • 0.5 onion, finely chopped
  • 1 head cauliflower, grated
  • 1 cup sliced fresh mushrooms
  • 1 cup grated Parmesan cheese
  • 0.5 cup heavy whipping cream
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon ground nutmeg
Instructions:
  • In a large skillet over medium heat, melt ghee. Sauté onion and garlic until tender, around 3 minutes. Add grated cauliflower, cook for another 3 minutes. Incorporate mushrooms and cook until tender, approximately 3 minutes.
  • Combine Parmesan, cream, salt, pepper, and nutmeg in the skillet and cook over medium heat until creamy, for 5 to 7 minutes.
