Satisfying keto salad with broccoli, cauliflower, bacon, and creamy dressing is a hearty meal on its own.
Ingredients:
  • 1 pound bacon
  • 2 cups broccoli florets, chopped
  • 2 cups cauliflower florets, chopped
  • 1 carrot, chopped
  • 0.25 cup chopped green onions
  • 0.5 cup mayonnaise
  • 0.25 cup distilled white vinegar
  • 1 tablespoon sour cream
  • 1 pinch garlic powder
  • 1 pinch dried basil
  • 0.25 cup shredded Cheddar cheese
  • 1 tablespoon chopped fresh cilantro, or to taste
Instructions:
  • In a large skillet over medium-high heat, cook the bacon until evenly browned, turning occasionally, for about 10 minutes. Drain the bacon on paper towels, chop, and set aside.
  • Mix together the broccoli, cauliflower, carrot, and green onions in a large bowl.
  • In a separate bowl, mix mayonnaise, vinegar, and sour cream until smooth. Add garlic powder and basil for flavor.
  • Drizzle dressing on vegetables, toss well to ensure each piece is coated evenly. Refrigerate for about 1 hour to let the flavors blend together perfectly.
  • Garnish salad with shredded Cheddar cheese and fresh cilantro.
