Comforting keto broccoli cheddar soup for cozy winter nights.
Ingredients:
  • 1 teaspoon butter
  • 3 cloves garlic, minced
  • 2.5 cups vegetable broth
  • 3 cups chopped broccoli
  • 1 cup heavy whipping cream
  • 3 cups shredded Cheddar cheese
  • 2 slices bacon, chopped and cooked
  • salt and ground black pepper to taste
Instructions:
  • In a saucepan over medium heat, melt butter. Cook garlic until tender, around 2 minutes. Stir in vegetable broth, heavy cream, and broccoli. Bring to a boil, then simmer until the broccoli is tender, approximately 15 minutes.
  • Gradually melt Cheddar cheese while stirring constantly. Mix in bacon pieces and season with salt and pepper.
