Delicious, easy low-carb keto pancakes made with coconut flour, erythritol, and almond milk.
Ingredients:
  • 0.5 cup coconut flour
  • 0.25 cup erythritol confectioners' sweetener (such as Swerve®)
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon fine sea salt
  • 1 cup unsweetened almond milk
  • 7 large eggs
  • 2 tablespoons unsalted butter, melted and cooled slightly
  • 1 tablespoon coconut oil, or as needed
Instructions:
  • In a large bowl, mix coconut flour, sweetener, baking powder, and salt. In another bowl, whisk almond milk, eggs, melted butter, and vanilla extract. Fold the egg mixture into the flour mixture until well combined.
  • Prepare the skillet by greasing it with flavorful coconut oil and heating over medium-high heat. Pour 3 tablespoons of batter into the skillet to create 3 1/2-inch circles. Cook until the pancakes' bottoms are golden brown, approximately 2 minutes. Gently flip and cook the other side until golden, around 2 more minutes. Cook the rest of the batter in batches, greasing the pan as necessary.
