Indulge in creamy keto pumpkin soup that's loved by all - use bone broth or chicken stock.
Ingredients:
  • 1 small onion, diced
  • 2 tablespoons zero-calorie brown sugar substitute (such as Lakanto Golden®)
  • 1.5 teaspoons pumpkin pie spice
  • 2.5 cups chicken stock
  • 1 (15 ounce) can pumpkin puree
  • 1 cup heavy cream
  • 2 tablespoons heavy cream, or to taste
  • 3 tablespoons crushed walnuts
Instructions:
  • In a saucepan over medium heat, warm the oil. Cook onions for 2-3 minutes. Lower heat, add garlic, and cook until onions are soft, about 2-3 minutes more. Add sugar substitute, pumpkin pie spice, and salt. Mix in chicken stock, then whisk in pumpkin puree. Cover and simmer for 10 minutes on medium-low heat.
  • Carefully blend soup until smooth using an immersion blender. Add 1 cup of heavy cream and adjust seasoning with salt, if needed. Finish by garnishing with a drizzle of heavy cream and crushed walnuts.
