Whip up quick and easy gluten-free keto pumpkin pancakes in the air fryer for a speedy morning meal ready in under 10 minutes!
Ingredients:
  • nonstick cooking spray
  • 0.5 cup pumpkin puree
  • 0.5 cup peanut butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon pumpkin pie spice
  • 0.5 teaspoon baking soda
  • 2 packets stevia sweetener (such as Truvia®)
  • 1 pinch salt
Instructions:
  • Place a parchment paper in the air fryer basket and generously coat it with cooking spray.
  • In a bowl, mix together pumpkin puree, peanut butter, eggs, vanilla, pumpkin pie spice, baking soda, sweetener, and salt until fully combined.
  • Scoop 3 tablespoons of batter for each pancake onto parchment paper in the air fryer basket, ensuring they are spaced 1/2 inch apart. Cook in batches if needed.
  • Cook the basket in the air fryer oven at 300 degrees F (150 degrees C) without flipping until the bottom side is fully cooked, for 4 to 6 minutes. Repeat with the remaining batter.
