Make keto strawberry ice cream without a machine - just use a Mason jar and immersion blender for a creamy treat.
Ingredients:
  • 1 cup heavy whipping cream
  • 0.33333334326744 cup chopped strawberries
  • 2 tablespoons low-calorie natural sweetener (such as Swerve®)
  • 1 tablespoon vodka
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon xanthan gum
Instructions:
  • In a wide-mouth pint-size jar, blend together heavy cream, strawberries, sweetener, vodka, vanilla extract, xanthan gum, and salt for a luscious mix.
  • Blend the cream mixture with an immersion blender in an up and down motion for 60 to 75 seconds until it thickens and soft peaks form.
  • Seal the container and place in the freezer, stirring every 30 to 40 minutes, until the ice cream reaches your desired texture, approximately 3 to 4 hours.
