Homemade keto blueberry maple ice cream - no ice cream maker needed!
Ingredients:
  • 1 cup heavy whipping cream
  • 0.33333334326744 (10 ounce) package frozen blueberries
  • 2 tablespoons low-calorie natural sweetener (such as Swerve®)
  • 1 tablespoon vodka
  • 0.5 teaspoon maple extract
  • 0.25 teaspoon xanthan gum
Instructions:
  • In a wide-mouth pint-sized jar, blend heavy cream, blueberries, sweetener, vodka, maple extract, xanthan gum, and salt using an immersion blender in an up and down motion for 60 to 75 seconds until soft peaks form and the cream thickens.
  • Place the jar in the freezer, stirring every 30 to 40 minutes, until the ice cream reaches the perfect consistency, about 3 to 4 hours.
