Keto-friendly no-bake peanut butter bars with plant-based butter and Swerve® for a quick and easy treat.
Ingredients:
  • 0.5 cup plant based butter (such as Country Crock® Plant Butter)
  • 1 cup erythritol confectioners' sweetener (such as Swerve®)
  • 1 cup graham cracker crumbs
  • 0.5 cup creamy peanut butter
  • 1 cup dark chocolate chips (such as Lily's®)
  • 2 tablespoons creamy peanut butter
Instructions:
  • Cover an 8-inch square pan with parchment paper, leaving some paper hanging over the edges.
  • Melt plant-based butter in the microwave until smooth. Stir in confectioners' sugar, graham cracker crumbs, and 1/2 cup peanut butter until combined. Press mixture firmly into the prepared pan.
  • Combine chocolate chips and 2 tablespoons of peanut butter in a microwave-safe bowl. Microwave for 45 seconds, then stir well. Microwave in 20-second intervals until smooth. Pour the mixture over the graham cracker-peanut butter layer and use an offset spatula to spread it evenly.
  • Chill until partially set, for about 30 minutes. Then, gently score the chocolate layer with a knife to prevent cracking when cutting into bars. Return to the refrigerator until completely firm, for an additional 30 minutes.
  • Gently lift the dessert out of the pan using the overhanging parchment paper, then slice into bars.
