Keto-friendly satay with zoodles, a delicious twist on a takeaway classic without the rice.
Ingredients:
  • 27.30 gm peanut oil
  • 2.50 gm curry powder
  • 1 tsp finely grated fresh ginger
  • 2 (125g each) chicken thigh fillets
  • 1/4 red onion, finely chopped
  • 1/2 small fresh red chilli, deseeded, finely chopped
  • 20.80 gm peanut butter
  • 80ml (1/3 cup) coconut milk
  • 5.30 gm soy sauce
  • 30.00 ml chopped roasted salted peanuts
  • 1/4 lime, juiced
  • 1 large zucchini, trimmed
  • 1/2 Lebanese cucumber, thinly sliced
  • 125g cherry tomatoes, halved
Instructions:
  • In a shallow glass or ceramic dish, mix together 1 tablespoon of oil, 1 minced garlic clove, 1/2 teaspoon of curry powder, and ginger. Add the chicken and coat it well. Marinate in the fridge for at least one hour, covered.
  • In a small saucepan over medium heat, warm the remaining oil. Sauté the onion for 3 minutes until softened. Add the chili, remaining garlic, and curry powder, cook for 1 minute until fragrant. Mix in the peanut butter, coconut milk, and soy sauce. Simmer for 2-3 minutes until slightly thickened. Save 1 teaspoon of chopped peanuts for garnish. Stir in the rest of the peanuts and lime juice. Keep warm, covered.
  • Transform the zucchini into "noodles" using a spiralizer or by slicing lengthwise with a vegetable peeler and cutting into strips.
  • Preheat a chargrill pan or barbecue over medium-high heat. Grill the chicken for 3-4 minutes on each side until nicely charred and fully cooked. Transfer to a plate, let it rest for 5 minutes, then slice it thickly.
  • In each bowl, arrange the zucchini ‘noodles’ evenly. Top with chicken, cucumber, and tomatoes, then generously drizzle with the warm satay sauce.
