Easy no-churn keto vanilla ice cream - rich, creamy, and smooth. No ice cream machine needed.
Ingredients:
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered zero-calorie sweetener (such as Swerve®)
  • 1 tablespoon vodka
  • 0.25 teaspoon xanthan gum
  • 1 pinch salt
Instructions:
  • In a wide-mouth pint-sized jar, mix cream, sweetener, vodka, vanilla extract, xanthan gum, and salt. Use an immersion blender to blend the mixture until thickened with soft peaks, about 60 to 75 seconds.
  • Use an immersion blender to whip the cream mixture with gentle up-and-down motions until it thickens and forms soft peaks, which should take about 60 to 75 seconds.
  • Chill the jar in the freezer for 3 to 4 hours, stirring every 30 to 40 minutes.
