Ingredients:
  • 2.75 cups almond milk
  • 0.5 cup coconut flour
  • 0.75 teaspoon sea salt
  • cooking spray
Instructions:
  • Combine eggs and almond milk in a bowl, whisk until fully mixed.
  • In a separate bowl, mix coconut flour and salt. Add the egg mixture and whisk until the batter is smooth and soft. Allow it to stand for 5 minutes.
  • Heat a 6-inch skillet over medium-high heat and lightly grease it with cooking spray. Pour in 1/4 cup of batter, swirl the skillet to spread it thinly, and cook covered for 1 to 2 minutes until the top is set and the bottom is lightly browned. Carefully flip using a spatula and cook the other side for about 1 minute until golden brown.
