Create a gourmet meal with just 4 simple ingredients - no takeout required!
Ingredients:
  • 1kg fresh marinara mix
  • 300ml ctn pouring cream
  • 100g vintage cheddar, crumbled
  • 2 sheets (25 x 25cm) frozen puff pastry, quartered, just thawed
Instructions:
  • Preheat the oven to 200°C. In a large frying pan over medium-high heat, cook one-quarter of the marinara mix in 1 teaspoon of oil for 3-4 minutes until almost cooked. Transfer to a 310ml (1 1/4-cup) ovenproof dish. Repeat with the remaining marinara mix and oil for 3 more batches, using 3 additional dishes.
  • Pour the cream into the pan and bring it to a boil. Lower the heat to medium and simmer for 3-4 minutes until the cream reduces by a third. Add the cheddar, season with salt and pepper, and stir for 1-2 minutes until the cheddar melts.
  • Pour the creamy mixture over the seafood in the dishes. Top each dish with 2 pastry squares placed at opposite angles, pressing gently to seal the edges. Brush the pies with water and season with salt and pepper.
  • Place the pies on a baking tray and gently cut 2 slits on the top of each for steam to escape. Bake for 20 minutes or until beautifully puffed and golden brown.
