Mornay Sauce

Versatile sauce for meat, seafood, eggs, and veggies.
Ingredients:
  • 2 tablespoons butter or margarine
  • 2 tablespoons all-purpose flour
  • 1/2 cup half-and-half
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese or shredded Swiss cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground red pepper (cayenne)
Instructions:
  • In a 1 1/2-quart saucepan, gently melt butter over low heat. Add flour and stir well. Cook on low heat, stirring constantly, until the mixture is smooth and begins to bubble. Remove from heat.
  • Combine the half-and-half and broth in a smooth motion until well mixed. Bring to a boil while stirring continuously. Allow it to boil for 1 minute while stirring. Add cheese, salt, and red pepper; stir until the cheese is fully melted.
