Ingredients:
  • 40g butter, softened
  • 20.00 ml plain flour
  • 125ml milk
  • 40g gruyere
  • 40g cheddar cheese
  • 4 thick slices White Sourdough Vienna
  • 5.90 gm Dijon mustard
  • 150g shaved ham
Instructions:
  • In a saucepan over medium heat, melt half of the butter. Stir in the flour and cook for 1 minute until slightly grainy. Remove from heat and pour in the milk. Whisk until smooth, then return the pan to heat. Cook and stir for 2 minutes until the sauce boils and thickens. Remove from heat and mix in half of the gruyère or Swiss cheese and half of the cheddar until melted and combined. Season to taste.
  • Preheat a barbecue grill or chargrill over medium heat. Evenly brush the bread with the remaining butter. Grill the bread for about 1 minute until lightly toasted underneath. Place the bread toasted-side up on a clean work surface. Spread half of the bread with mustard, then layer with cheese sauce, ham, and the remaining gruyère or Swiss cheese and cheddar. Finish by topping with remaining butter, toasted-side down.
  • Grill the sandwiches for 2-3 minutes on each side until the bread is golden brown and the filling is heated through. Cut in half and serve promptly.
