Convenient and delicious tuna mornay pies ready in no time from your freezer!
Ingredients:
  • 65g butter, chopped
  • 1 medium brown onion, finely chopped
  • 62.50 ml plain flour
  • 515.00 gm milk
  • 425g can tuna in brine, drained, flaked
  • 42.00 gm lemon juice
  • 62.50 ml chopped fresh flat-leaf parsley leaves
  • 375.00 ml fresh breadcrumbs
  • 125.00 ml finely grated parmesan cheese
  • 2 tsp finely chopped fresh lemon thyme leaves
Instructions:
  • Start by melting butter in a saucepan over medium heat, then set aside one-third of it in a heatproof jug. Add onions to the pan and cook for 2 to 3 minutes until softened. Stir in flour and cook for 1 to 2 minutes until bubbling. Pour in milk and bring to a boil, then reduce heat to low and cook for 5 minutes until thickened. Add tuna, lemon juice, and half the parsley, then cook for an additional 2 minutes until heated through. Season with pepper and divide mixture into four 1 1/2 cup-capacity baking dishes.
  • Preheat grill on high. Mix breadcrumbs, cheese, thyme, and the rest of the parsley in a bowl. Sprinkle over the tuna mixture. Brush with reserved butter (re-melt if needed.) Grill for 3 to 4 minutes until golden. Serve.
