Air fryer tuna mornay parcels recipe

Delicious creamy tuna, cheese, and pea pies - a perfect meal with a side salad for dinner or a quick lunch option when reheated. Prep the filling in advance for easy assembly just before serving.
Ingredients:
  • 30g butter
  • 2 green shallots, thickly sliced
  • 40.00 ml plain flour
  • 310ml (1 1/4 cups) milk
  • 80g (1 cup) coarsely grated cheddar
  • 185g can tuna in oil, drained, flaked
  • 120g (3/4 cup) frozen mixed vegetables (peas and corn)
  • 2 sheets frozen puff pastry, just thawed
  • 1 egg, lightly whisked
Instructions:
  • In a medium saucepan over medium heat, melt the butter. Add the shallot and cook, stirring, until soft, about 2 minutes. Stir in the flour and cook for 1 minute. Slowly pour in the milk while stirring continuously until smooth. Allow it to come to a simmer and cook for 2 minutes until slightly thickened. Take off the heat and mix in the cheese. Transfer to a large bowl and let it cool to room temperature.
  • Gently mix the tuna and frozen vegetables into the creamy white sauce until well combined. Cut each pastry sheet into 4 squares, then spoon 1/4 cup of the tuna mixture onto the center of each square. Fold the corners of pastry toward the center to seal in the flavorful filling.
  • Preheat the air fryer to 190C for 2 minutes. Brush parcels with egg, grease the base of the air fryer basket with oil, and arrange 4 parcels in the basket. Cook for 8 minutes until light golden. Turn over and cook for an additional 3 minutes until golden. Repeat with the remaining parcels and serve.
