Ingredients:
  • 250.00 ml mashed potato, cold
  • 415g can Pink Salmon, drained, bones removed, flaked (see note)
  • 40.00 ml gherkins, finely chopped
  • 2 green onions, thinly sliced
  • 1 egg, lightly beaten
  • 125.00 ml dried breadcrumbs
Instructions:
  • In a bowl, mix together cold mashed potato, canned salmon, finely chopped gherkins, thinly sliced green onions, lightly beaten egg, and dried breadcrumbs. Form the mixture into 8 patties.
  • In a frying pan over medium-high heat, heat 2 tablespoons of olive oil. Cook the patties in batches for 4 minutes on each side or until golden brown. Drain on paper towels, allow to cool, and refrigerate for up to 2 days.
