Create a simple yet delicious meal using just four essential ingredients - no takeout needed!
Ingredients:
  • 135g btl Red Pepper or Tomato Tapenade
  • 4 chicken breast fillets
  • 1kg Golden Delight potatoes, washed, peeled, coarsely grated (see note)
  • Olive oil, for shallow-frying
  • 100g mixed salad leaves
Instructions:
  • Transfer the flavorful tapenade to a bowl, then generously coat the chicken with it.
  • In a large bowl, season the potato with salt and pepper. Heat enough oil in a frying pan to reach 5mm up the side over medium heat. Add four 1/3-cup portions of potato, lightly flatten, and cook for 2-3 minutes per side until crispy and golden. Transfer to a plate lined with paper towel. Repeat this process with the remaining mixture in two more batches.
  • Preheat the grill on high to create a perfect sear. Grill the chicken for 3-4 minutes on each side until it is fully cooked, then slice it into thick pieces for a succulent result.
  • Enjoy with crispy golden potato cakes and a fresh side salad.
